Finest ingredients? Yep. Hand-made? You know it. Local? Sure, if you live in Seattle. Does any of that really matter? Nope. Not if they don’t taste like they were made in heaven by Leonardo da Vinci himself. (Hint: They do.)

Being Italian, goes against our instincts to make anything “mild”, but we know it’s not all about us.

A spicy twist on the original, this sausage is great baked with Cannellini beans, rosemary, and tomato sauce.

From the Calabria region, this is the most popular sausage of southern Italy and the one I grew up on.

This spicy number is my go-to (must be the Calabrese in me.) Excellent with peppers and potatoes.
